Egg Stuffed Tomatoes

I wanted a healthy and yummy breakfast the other day, so I decided to whip up these stuffed tomatoes. I followed this recipe because I love how simple it is and how much room it leaves for adaptation. You can literally add/subtract whatever you want in with the eggs depending on what you have lying around in your kitchen. Also, if you have wobbly tomatoes like I did, try putting them in a muffin pan to keep them upright while baking.
